Grappa matured in barrel of Sherry PX

Andalusia is renowned for flamenco, fighting bulls and sherry.

Dance and corrida are not my cup of tea but when I visited for the first time the Bodegas Williams & Humbert at Jerez de la Frontera, I was literally dumbfounded.

Seeing the facility from the outside, I could never have imagined what I saw as soon as I entered: a true cathedral dedicated to Sherry.

Thousands and thousands of Botas, the typical 500-liter casks, perfectly aligned and stacked in a huge and majestic space. After ascending a spiral staircase, you could admire 1.9 million square feet of cellar space (equivalent to 25 soccer fields!), filled to the ceiling, and you could smell the intense and enveloping aroma of the resting Sherry

After tasting various Fino, Amontillado, Oloroso, and attempting in vain to hit the centre of a copita with some kind of small ladle named venencia, I chose a Sherry from the grapes of Pedro Ximenez, very thick and sweet, with a robust structure and complex dried fruit aromas.

I don’t think anybody will notice if some botas are missing, as there are about 40,000 of them in there!

Now they are in the cellar of my own distillery in Schiavon, to enrich this memorable Grappa with unique aromatic .

That is how these collaborations were born with three prestigious brands, thus giving origin to three Grappas with different and fascinating aromatic sensations: red fruit, dried fruit, exotic fruit, candied fruit.

Raw material: marc obtained from a cuvée of non-aromatic grape varieties
Distillation: artisanal, in small lots, with a discontinuous copper still provided with steam pots
Aroma: dried fruit, milk chocolate, toffee, raisins, honey
Taste: toasted wood, pleasant and long lasting
% Alc - Content: 40% Alc./Vol - 500 ml
Service: at temperature of 18/20 °C - 65/68 °F in a tulip-shaped glass
