Crysopea of Cleopatra

Cleopatra Oro is a line of Poli Grappas obtained from very fresh marc, featuring a refinement and an unique bouquet. A final stay in oak barrels completes the structure.

Why Cleopatra?

The name derives from the inventor of the first historically documented still, Cleopatra, alchemist of the Ancient Egypt, who used it to produce gold and therefore called it Crysopea (from Greek chrysos, gold and poirò, to make).

In the XXI century the continuous evolution and studies in the Poli Distillery have produced a new Crysopea, the most innovative bain marie vacuum still in function through which the precious Poli Moscato ORO has been distilled.

From the distillation of gold to the Grappa

The construction of this incredible still begins in 2003, when the Experimental Center of the Institute of San Michele all'Adige decides to analyze and to experiment with the functioning of the bain marie vacuum still equipped with a column at adjustable reflow without plates. From 2005 till 2010 the members of the Poli family devote themselves to its construction, with the aim of continuing the endless evolution of the manufacturing process of Grappa through a discountinuous artisan method.

In this way the new Poli Crysopea wants to close a symbolic circle, depicted by the dragon Uroboros biting forever its own tail.

Poli Crysopea


The Poli Crysopea is the innovative bain-marie vacuum still equipped with a column without distillation plates. In contrast to other traditional bain-marie systems operating in Italy, the distillates obtained with Crysopea are significantly better due to:

- enhanced terpene floral note

- important lowering in head impurities

- considerable decrease in esters

- reduction in methyl alcohol.

The application of vacuum in the distillation process had already been tested by the Italian Enrico Comboni towards the end of the 19th century, but before being effectively used in production, many decades were to pass. This was caused by the considerable technical difficulties linked to the risk of implosion of the still and the condensation of vapours.

The most important advantage consists of a lowering of the boiling point of alcohol and the main volatile compounds concentrated in the grape pomace, determined by the negative pressure inside the still (the vacuum).

This enables a distillate to be obtained and marked by delicate fruity and floral fragrances which, in being thermolabile, are normally lost due to the temperature present inside a boiler.

The freshness of the Glera grapes is held in this bottle of Cleopatra Moscato Oro, a fragrant and delicate Grappa, distilled by Crysopea, our bain marie vacuum still.

Delicious scents of yellow fruits and aromatic herbs as well as a soft and clean taste, which reminds of fresh Sunday’s bread, describe the soul of this Grappa from the hills of Valdobbiadene: the scent of prosecco, paired with sweet and aromatic notes, creates in our mind the image of snacks in a wine cellar, with homemade bread, cold cuts and a nice glass of wine.
